~*~ Strawberry Ice Cream ~*~

Strawberries have been filling the local Farmers Markets for a few weeks now and one of my favorite Ice Creams is strawberry. The tart and flavorful berry with the sweet vanilla cream. Yummmmmmy!!! I have made strawberry ice cream before using a different recipe, but I wanted to try something a little different. This is what came out of it.

Here is the recipe I used: Due to the eggs added, it is actually more like a custard than ice cream.

Strawberry Ice Cream:
  • 2 cups strawberries, cleaned, hulled and blended in blender or food processor
  • 3 cups half and half
  • 3/4 cup sugar
  • 3 egg yolks
  • 1 tsp vanilla extract
  • pinch of salt
  1. Place blended strawberries in a small saucepan on medium-high heat and bring to a simmer. 
  2. Once simmering, turn heat down low and continue to simmer for 30-40 minutes. This will reduce the strawberries to a paste like consistency
  3. In a separate saucepan, heat the half and half until it bubbles along the edge of the pan.
  4. Meanwhile whisk together the egg yolks and sugar
  5. Gradually pour the hot cream into the egg mixture whisking constantly 
  6. Pour mixture back into the sauce pan and continue to heat until it coats the back of a spoon (about 5 minutes)
  7. Strain custard into the berry puree add vanilla and a pinch of salt
  8. Refrigerate custard overnight
  9. When custard is chilled, pour into ice cream maker and freeze per the manufacturers instructions
 I like to reduce the strawberry puree to get more of the strawberry flavor out of it.

 Combined the custard with the strawberries.
 Churning the Ice Cream. Once done the custard will have almost doubled in size!
Once the custard is done, it will be the consistency of soft serve. Go ahead and dish up or place in the freezer for a firmer ice cream. Either way it's going to be delicious!!!!
