Peanut Butter Ice Cream



Spring is here and I am whipping out the ice cream maker and getting back into the warm weather spirit. Looking for some new flavors to try and this one was calling my name. The creamy salty peanut butter combined with dairy and vanilla. How can you resist!!

 Five simple ingredients make this an easy recipe. C'mon you know you want to try it!!
So delicious!!! I am definitely adding this to the regular rotation.

Recipe is adapted from: The Perfect Scoop by David Lebovitz

Peanut Butter Ice Cream:  

- 3/4 cup smooth salted peanut butter
- ¾ cup plus 2 tablespoons sugar
- 2 2/3 cups half-and-half
- Pinch of salt
- 1/8 teaspoon vanilla extract

1. Puree the peanut butter, sugar, half-and-half, salt, and vanilla in a blender or food processor until smooth.
 
2.Chill the mixture thoroughly in the refrigerator or let the ice cream sit in the fridge over night (my preferred method). This helps infuse the half and half with the peanut butter and vanilla flavors. Then freeze it in your ice cream maker according to the manufacturer’s instructions.
